Happy Monday Menu

One of the many productive things Brian and I accomplished over the weekend was a thorough clean-out of the fridge, freezer and deep freeze along with an inventory of what all is in the freezer. We just got a whole bunch more food this weekend that added to our already fully-stocked freezers. I typed out the whole inventory and categorized it and it's ready to refer to for the next several weeks of meal planning. I seriously considered posting it here so you could see what I was working with but after those three marathon to nowhere posts about my Valentine's weekend, I figured my readers deserved something short and to-the-point for a while. Let's just say that it's obscene and I could host the Army for dinner if they'd stop by. With that, here's the plan for the week:

Monday: Baked Potato Soup (again, it was so good last time and I have like 10 lbs of potatoes around here), steamed spinach and fruit. It's our monthly date night tonight, but we decided instead of going out we'd eat here then go to a pottery place I've been meaning to check out. Hopefully I'll come home with some version of a Happy Everything platter.
Tuesday: Chicken and Hashbrown Casserole (I'll be adding in some corn), fruit salad. We're headed into San Antonio to have dinner with Granny and Grandpa so I needed an easy make-and-take meal. Granny is making a side. $10 says it's German rice.
Wednesday: Chicken and Broccoli Stir Fry with egg drop soup. do y'all make egg drop soup? It's seriously the cheapest, easiest thing to make ever. Boil chicken broth, or stock or bullion, drop in beaten eggs and stir them around. Done! You can season it up if you want or add green onions. Add some corn starch dissolved in a little water if you want it thicker.
Thursday: Steak on the grill (I'm not sure what cut yet, we have like 4 to choose from) baked potatoes, wedge salad with cabbage instead of lettuce.
Friday: Lemon pepper Catfish, grilled sweet plums, steamed carrots

To make all that do you want to know what I had to buy? Shredded cheese. Feel free to leave a link to your favorite recipes or meal plan in the comments.

Sounds like a productive weekend cleaning! I'm going to have to try that baked potato soup out yum!
